Its not much of a stretch to say that in the last 25 years that correspond with this magazines existence (1981- 2006) there have been more changes in the way Louisianians eat, particularly in restaurants, than in any comparable period in our history. This quarter century has been a time of culinary ferment and innovation when restless, creative chefs, outside influences, and a renaissance of locally grown and produced foodstuffs have greatly improved our cuisine. In the process, Louisiana cooking has taken its place on the world stage. Twenty-five years ago, we were witnessing the waning of continental food, that amorphous style of international cooking that had its roots in hotels and the conceits of professional chefs. Too often, the chefs were more concerned with how their food looked on a plate than with how it tasted....

List of new restaurants keeps growing

Hurray for more restaurants! Four new spots recently popped up in the Twin Cities, and two others are on their way. • Midtown Global Market just keeps getting more global. Chang Bang opened in the grocery and restaurant hub on Lake Street near Chicago Avenue offering Southeast Asian standards, including spring rolls, chicken Thai basil, beef teriyaki and sushi. Eventually, a weekend dim sum may be added to the mix. "I want a little bit of everything," says owner Tieng Vang, who also runs Yummy on Nicollet Avenue in Minneapolis. • Also debuting in the area off Lake Street is Calypso, a Greek restaurant next to Midori's Floating World. Newcomer Adam Johnson is offering gyros, falafel and other favorites along with dishes with a Greek twist, such as shrimp pasta with olives and feta....

Landry's Restaurants Posts 3Q Loss

Casual-dining chain Landry's Restaurants Inc. on Thursday said it swung to a third-quarter loss, due in large part to charges resulting from the sale of its Joe's Crab Shack chain. Quarterly loss totaled $30 million, or $1.36 per share, compared with a profit of $16 million, or 73 cents per share during the same period last year. Results include a 27-cent per share charge for converting Joe's Crab Shack locations to another Landry's concept. In October, the company said it would sell its Joe's Crab Shack restaurants, which caused a loss from discontinued operations of $1.51 per share. Earnings from continuing operations were 15 cents per share. Revenue grew 32 percent to $290.4 million, from $220.9 million last year. Analysts expected a profit of 20 cents per share on sales of $377 million....

Seafood shortage predicted in study

WASHINGTON - The world will run out of seafood by 2048 if steep declines in marine species continue at current rates, according to a study issued Thursday by an international group of ecologists and economists. The paper, published in the journal Science, concludes that overfishing, pollution, and other environmental factors are wiping out important species across the globe, hampering the ocean's ability to produce seafood, filter nutrients and resist the spread of disease. "We really see the end of the line now," said lead author Boris Worm, a marine biologist at Canada's Dalhousie University. "It's within our lifetime. Our children will see a world without seafood if we don't change things." The 14 researchers from Canada, Panama, Sweden and the United States spent four years analyzing all the available data on fish populations and ocean ecosystems to reach their conclusion....

Lobster chain fishes for customers with fresh approach

Red Lobster, once synonymous with endless fried shrimp specials and bottomless buckets of crab, is in the midst of a multiyear makeover designed to further nudge the seafood chain away from its hush puppy roots. Last week, Red Lobster, owned by Orlando-based Darden Restaurants, said it will expand its fresh fish offerings, launch a redesigned menu and offer dishes with new flavors ranging from a creamy honey BBQ sauce to a sweet-and-spicy glaze. "In essence, we're looking to give customers fine dining quality food at about half the price they would pay at a fine dining quality restaurant," said Kim Lopdrup, president of Red Lobster. Analysts say Red Lobster is evolving to capture the growing market for healthful, flavorful fare. "They're doing the right thing," said Michael Smith, a restaurant stock analyst for Oppenheimer & Co....

State investigates restaurants selling cheaper fish as grouper

DAYTONA BEACH -- Investigators are looking into complaints that the grouper advertised on some Florida restaurant menus may not be what is served on a customer's plate. State economic crimes investigators are probing allegations that restaurants substituted grouper with cheaper types of fish, said JoAnn Carrin, spokeswoman for Attorney General Charlie Crist. She declined to discuss details of the probe. ....

SC festival organizers concerned about imported shrimp at local event

BEAUFORT, S.C. - Organizers of the Beaufort Shrimp Festival say all restaurants participating in this weekend's event have to serve at least one item made with local shrimp.But the manager of Barbara Jean's Restaurant and Bar on Lady's Island says its shrimp burgers won't use the local catch. Instead, the burgers will be made with shrimp from a food supplier.Tracy Faulk said the six-restaurant chain, which also has stores in Florida and Georgia, uses one brand of shrimp for a consistent taste.That violates an agreement restaurants had to sign to participate in the festival, which is put on by the Beaufort Regional Chamber of Commerce and the South Carolina Shrimpers Association."We certainly expect them to adhere to the regulations," said Liz Mitchell, tourism marketing director with the chamber....
